Jalapeno Popper Chicken Casserole
serves 4
Ingredients
- 2 ea chicken thighs, cooked, bite-size chop
- 1/2 ea jalapeno pepper, fine chop
- 1/2 ea jalapeno pepper, sliced thin
- 8 oz cream cheese, cubed
- 1/4 C mayonnaise
- 1 C cheddar cheese, shredded
- 2 sl bacon, cooked crispy, crumbled
Instructions
- Saute the jalapeno in oil until soft, then blend in the cream cheese and mayonnaise. Mix in the chicken and 1/2 C cheddar cheese.
- Pour the mixture into a buttered 6"x6" baking dish, top with the remaining cheddar cheese and roast at 400 until the cheese is lightly browned.
- Plate, garnish with the bacon and sliced jalapeno and serve hot.
